Banana Pancakes

Ahh...Sunday mornings.
Something about Sundays makes me want to lounge in my pjs until noon, savor my coffee, and make pancakes.  One of my go to recipes is banana pancakes.


I always make them when we have ripe bananas that need to be used pronto.  I found the recipe over at Sweetnicks.
Warning: her pictures will make you want to eat.  Every recipe I have ever tried of hers has been easy and super tasty.  You will not be disappointed.

Wanna make some?  Here's the recipe:

1 cup all-purpose flour
1Tbsp white sugar
2 tsp baking powder
1/4 tsp salt
1 egg, beaten
1 cup milk
2 Tbsp vegetable oil
2 ripe bananas, mashed


*per Sweetnicks' notes I added about 1/4 tsp cinnamon and about 1 tsp brown sugar to the batter.  And I don't always remember the salt and they turn out fine.




Combine all ingredients.  Heat a lightly oiled griddle or frying pan over medium high heat.
Poor or scoop approximately 1/4 cup of batter onto griddle.
Cook until golden brown on both sides; serve hot.

Devour.

  4. Yum! I love pancakes but I've never tried banana pancakes. I'll have to try these next time I have ripe-and-ready bananas!
