There are so many things I love about Fall but one thing that I look forward to the most is my mom's pumpkin cookies. It doesn't feel like Fall until there is a batch of these in the cookie jar.
If you love pumpkin, cinnamon, raisins, walnuts...cake like cookies...then this recipe is for you.
Mom's Pumpkin Cookies
Preheat oven 375 degrees
Cream together:
1 cup butter
1 cup sugar
Add and mix well:
1 cup pumpkin (canned is fine)
1 Lg egg
1 tsp vanilla
Sift* together and add to the above mixture:
2 cups sifted* all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp ground allspice
*I don't sift the flour before measuring and I "sift" the ingredients together by running a fork through it ;)
Stir in:
1 cup chopped walnuts
1 cup raisins
Drop dough by teaspoonfuls onto ungreased cookie sheet. Bake approximately 15 minutes. Yields about 4 dozen.
